About 12 pancakes - 15 minutes of preparation
2 tablespoons of chia seeds
200g of gluten free oats
2 very ripe banana’s
(the ugliest, the better)
45ml of maple syrup
2 tablespoons of coconut oil
1 pinch of salt
1 teaspoon of vanilla powder
Place the chia seeds in a bowl and cover with water (about 170 ml). Wait 15 to 20 minutes, until some kind of gel appears.
Place all the ingredients (except the chia seeds) in a blender with 100 ml of water and mix everything until a paste is obtained. Then pour the dough into a bowl and add the chia seeds. Mix everything well. Finally, put a little coconut oil in a pan and pour in 2 large tablespoons of batter per pancake, let it become golden brown over medium heat and repeat for each pancake.
The extra tip: serve them with a lot of maple syrup and blueberries or a little cashew butter, a real pleasure, not even guilty!
