Gazpacho
For 4 people - 10 minutes of preparation
Ingredients
1 whole cucumber
The juice of 1 lemon
1 avocado
1 clove of garlic
1 or 2 good handfuls of mint
Salt and pepper
3 tbsp. of olive oil
Preparation
Mix all the ingredients together in a blender. And there you go! If it’s too thick, add a splash of water to get the consistency you want. Personally, I like the texture without water!
The extra tip: delicious at aperitif time, this gazpacho is served in small transparent pot with a mint leaf or a few roasted pine nuts on top.
